You are burnt out of eggs, but need a breakfast that will create the exact nutrient makeup of what was provided in the Partner Challenge meal plan.
Enter, Kodiak Power Cakes. I am talking about the ‘original’ dry, pancake mix that can be found at the local grocery store. Here is the substitute meal which has additional items to balance what is ‘missing’ from the eggs/egg whites.
<200 lbs.
Meal 1
- ½ cup dry Kodiak Power Cake mix
- Add JUST enough water and mix. Use a griddle to cook on if you can, and get it hot before adding the mix.
- ½ tbsp. Texas honey (to top pancakes with)
- ¾ cup Fage 2% Greek yogurt
>200 lbs.
Meal 1
- ½ cup dry Kodiak Power Cake mix
- Add JUST enough water and mix. Use a griddle to cook on if you can, and get it hot before adding the mix.
- ½ tbsp. Texas honey (to top pancakes with)
- ½ tbsp. Kerrygold grass-fed butter (to top pancakes with)
- 1 ½ cup Fage 2% Greek yogurt
There you have it. A meal completely removed of eggs but that is also palatable for breakfast!
Waiting out the challenge and suffering through eating any food item is a bad idea. Substitutions need to be made in order to make this sustainable, as well as to build knowledge about food selections and how these choices equate.
